1-2oz. light rum
1/2oz. blackbury brandy
4oz. pinapple juice
Fill a coctail shaker with crushed ice. Add ingredients and shake well. Pour into a chilled collins glass. If you are making a fancy chi chi, garnish with a maraschino cherry and/or pinapple wedge.
* Note: For an everyday chi chi, simply pour into any old glass and drink. No garnish needed unless you consider it dinner.
