Another soup that is both naughty and nice!  Tastes like it has a million calories, but nice because it doesn't.   Easy to make, lots of vegies, and a boost of calcium too.  The soup is low enough in points to splurge on a nice piece of garlic toast.  Don't forget the green salad.
8c. vegetable broth
1-20oz. bag of cauliflower
1-20oz. bag of broccoli
1-20oz. bag of carrots
(Substitute 3-20 oz. bags of Normandy blend frozen vegies, a combo of the three)
1-pound of Lite-Velveeta cheese (cubed)

Heat broth in large soup pot.  Add vegies and simmer 30 minutes on medium heat till vegies are cooked through, tender-crisp but not mushy.  Turn heat to low and add cubed cheese.  Stir gently till cheese is melted and blended in soup

Serve immediately.  Serves 8.  Each serving is 2 WW Points.
