2c. baking potato, peeled and cubed
2c. cauliflower florets
1oz. I Can't Believe It's Not Butter! spray
1oz. Non-Fat Half & Half or Non-Fat Evaporated Skim Milk
1t. minced garlic
1t. minced chives
1t. chopped fresh parsley
salt and pepper to taste
Steam potato cubes and cauliflower florets till tender, but not mushy. Mash or use whipper till blended. Fold in remaining ingredients. Salt and pepper to taste.
Serves 4
If you don't like garlic, leave it out.
