Okay, so would you have looked here if I said it was a bean dip? Try it with a raw vegie tray. Try it with whole wheat pita chips or homemade corn tortilla chips. It's good... honest! And super quick to make.
2c. white or pinto beans (or 1-15oz. can of either variety)
1t. olive oil
2 garlic cloves, peeled and minced
1t. turmeric powder
1t. ground cumin
1/4t. ground curry powder
1/2t. salt
dash pepper
Combine all ingredients and blend till smooth with either a food processor or an immersion blender.
Chill before serving. (7 Points if you eat all the dip yourself)
Tip: Nice as an addition to a green salad. Be creative.
