Fun
Tasty and fast.  What's not to love?  Loaded with vitamins, it does a body good.  Serve with a green salad or some fresh corn bread.  Ono!
1medium potato, cubed (about 1c.)
1 medium onion, chopped (1/2c.)
1c. chopped bell pepper (mixed frozen variety ok)
1T. chili powder
1t. ground cumin
1/2t. minced garlic
1t. turmeric
1 can (28oz.) chopped tomatoes, undrained
1 can (15 oz.) garbanzo beans, rinsed and drained
1 can (15 oz.) black or kidney beans, rinsed and drained
1 can (8 oz.) tomato sauce
2 medium zucchini, cubed (2 c.)
1c. water
1/2c. oat bran
salt and pepper to taste

Heat all ingredients except zucchini and oat bran to gentle boil in a large pot, breaking up the tomatoes and stirring occasionally; reduce heat.  Cover and simmer for about 15 minutes.

Add zucchini and oat bran, mix in thoroughly.  Cover and simmer 7-10 minutes more on a low heat or until zucchini is tender.

Serve immediately.  Serves 6.  (About 2 Points per serving)
